since last upgrade long text fields are no longer expandable in edit mode

Not to helpful… what are users to do if they have to enter more than one line of text ?

Hopefully this will be more helpful. When you first see the long text field, it will look like this, a single line of text:

But, as you add more text to the box, it will grow like this to fit your content:
