You can ‘name’ the null field with merge syntax, like so:
{{^MyField}}NameForNull{{/MyField}}

So your whole category template probably looks like this:
{{#MyField}}{{MyField}}{{/MyField}}{{^MyField}}NameForNull{{/MyField}}
