Similar to Matt’s post, but more a control hub for fields. Similar to Page Assignments.
I’d like to setup additional rendering options assignment rules by field API name, field type, by User, by Profile, by Role and/or by Record Type to set default rendering option.
I’d like to be able to add additional options by snippet.

+7We created a custom object called Setup that we load on each page that does this (and much more!).
It drives the vast majority of the render conditions on all our pages.
+7Unfortunately not, but that’s largely based on the fact that we haven’t used field renderers yet.

That sounds like an interesting idea and, based on just these few days of results, is something that would be helpful to lots of people. I’ll bring this to the dev team for consideration on a future release. Vote it up if you want to see it!
