I would like Promapp to audit (via the Change Log) when using the email process function.
If I provide feedback, an audit is maintained.
I want to know who the process has been emailed to, as well as the body of the message, similar to how it works with feedback.

Sounds like a really interesting feature request. The best way to request new features and garner support for them is via our UserVoice platform: https://nintex.uservoice.com
Once submitted, other users within the community will also be able to view your suggestion and vote for it to be included in future releases of the product.
