Hi—Could someone please advise me on whether there is a system generated report/log that we're able to view any user access privilege's or any Admin changes? Additionally, are we able to edit the password requirements?

I haven't seen any logs for access privlege or admin changes.
There is a level of granularity in the NWC permission model so you can limit what is possible to a very select group of users.
For password requirements I would configure identify federation and then rely on your idP for meeting any password complexity or MFA requirements.
