I have an SharePoint 2016 workflow where the Scheduled Start Times are set as follows 7:30pm start Mon. - Thurs. 6:30pm on Fri. 3:30pm Sat. and again Sat. at 5:30pm. I don’t see this functionality in NAC. Are there any workarounds to get this accomplished?

The current Scheduled workflow start event cannot accomodate different times depending on the day.
I have two solutions for you.
1. Have 3 versions of the workflow which have the required start times on the specific days. The start even can do this.
2. Create a component workflow start event that has your workflow in it. Then create a second workflow that starts daily, checks what day it is and then starts the component workflow at the required time for that day.
