Does Nintex Automation Cloud have an out of the box connector to Maximo?

Unfortunately, not at this time, based on the current documentation for connectors. However, the Nintex Extensions framework allows you to create custom connectors and install them in your environment if the third-party service provides a REST based API, which I do see Maximo has out there.

Out of curiosity, what is the use case for Maximo ? As it's a bit of a best of a product.
