Do you see this issue with the people picker field on start forms as well?
If so, did the user who set up User Directory Lookup in the Nintex Workflow tenant leave the company?

The reason I ask is that the link to Active Directory appears to be broken.

I have assigned the task to myself. I am trying to use the task form with “Assignee Authentication” turned off.   I can use the people picker on the new entry form, but when I open the task form assigned to me, I can’t enter my name (or anyone else’s name) in the people picker.  I did test this by turning the “Assignee Authentication” on and it works (because I am in the user directory), but it does not work with it turned off.  I did find an article that says that the People control is supported only in authenticated forms.  Could this be?

Yes, that is the issue.
At the present time, unauthenticated forms cannot use the People Picker to look up AD, use datalookups, and references to tables.
