How as an admin could we redirect a task that was originally assigned to one user, and re-assign it to a different user after it's been sent out?
I have the option to complete the task myself, but that is not what I’m looking for.

If you grant yourself access to the workflow as a business owner, you should be able to access the workflow tracking page in NWC. That will allow you to view the instances and delegate the tasks.
+1I tried this fix, added myself as a business owner, I can see the instance and the task, but there is still no option to delegate or override the task.

On the workflow inventory page, you should be able to get to the my nintex settings by clicking the ellipses next to the workflow. Verify if the delegate tasks option is checked for the workflow:

From memory, this only applies to instances started after you have changed permission. i.e. you cannot make yourself an owner now and delegate a task that has already been created.
