The signature control is very tall and takes up a huge amount of real estate, very different from other controls. It should be possible to adjust its height. What is strange is if you put the signature control in the same row as other controls, then it gets shorter. The wider the other controls -- and the width of other controls can be adjusted, the shorter the signature control. it should be possible to adjust the height without putting it on the same row as other controls.

@msalamon There is currently no way to change the height without another control in the row, you can add a space control(https://help.nintex.com/en-US/nwc/Content/Designer/FormControls/Space.htm) to help manage the height/width of the signature though.
