In the Assign Flexi Task workflow action, under the "Reminder" menu option, the notification can be configured to only send out during Business hours.

Nintex Workflows utilise the hours of operation based on what is defined under Site Settings> Regional Settings of the site where the Nintex Workflow is running.
You can also set your public holidays which can be included through Site Settings > Manage Holidays

Nintex Workflow do not use the business hours defined for individual under "My Sites"
