The list look up limitation with Nintex Forms for Office 365 has been increased from 2,000 to 5,000 items.
Additional Information
You will need to ensure you have the latest version of Nintex Forms App.
In the list look up control settings > Advance > Lookup item limit: increase the limit to 5000 items
