If a deleted SharePoint site is recovered from a SQL backup, will the recovered site contain the Nintex Workflow designs?

Yes, the actual workflow designs will also be restored. However, workflow status, tasks, and business logic might be affected.
To ensure full functionality and fidelity of the workflow states and related data, the Nintex database should be stored in tandem with the SharePoint content database.
