I am reaching out to see if by any chance, it is possible to add a watermark to many existing documents in a sharepoint list (via NAC)?
If possible, how can this be applied?

The only way to achieve this solution is to use a (paid) third-party connector.
NAC has a connector for CloudMersive, but this only watermarks PDF files.
You would need a subscription for Muhimbi, Encodian, etc to do the watermarking for you.
