We followed this process to uninstall Nintex Live framework:
Then we updated Nintex to latest version, and all of this came back.
What is the process to prevent the Nintex Live framework components from coming back after each Nintex update?

To avoid reinstalling Live by default, do a manual install.

Dont deploy NintexExternalConnection.wsp as this contains live.
I havent installed Nintex for SharePoint for a long time but I do remember at one stage there was a check box during the install to unselect to not install live.
