I wonder if someone could walk me through building a Nintex Workflow (SP 2016) that sends a notification to all parties (easy part) every 2 weeks if the Status = Pending. I don't want to use Flexi Task. Thank you!

imflowers, the easiest way to do this is with a scheduled site workflow. The schedule determines the time and interval for repeating the workflow. The easy part you referred to is the notification content inside the workflow.
This is better than having a continuous looping workflow.
