I'd like to know how one ca fix the "allow cell content selection" checkbox in the view settings if it is not visible in the production environment but visible in the development and test environments. K2 version 5.1 -> 5.0002.1105.0

I am not sure how this happened but most likely something failed during the instllation/upgrade in your production environment.
If you cannot run repair on your production server then I would recommend logging a support ticket with K2 and provide a K2 DB backup and K2 directory in order to identify the issue
