The lightning component only allows for Contacts to be associated to the package. We are using Person Accounts and need to be able to select a Person Account when creating the package. Person Accounts combines the Contact and Account records, and the Contact search will not allow for us to find these as they are Accounts. How does one set this component up to work with Person Accounts?

Unfortunately the contact lookup will not work with person accounts, you can suggest this over on our uservoice(https://nintex.uservoice.com/). What are you needing to do with the person account, is it just send an email? If you can provide a bit more detail I might be able to suggest a workaround.
