Does anyone know if it is possible to do multiple columns in the forms a user sees when using DocGen for Salesforce? I do not see an option for this and do not seeing any documentation on this.

I do not believe this possible, can you confirm are you refering to DocGen Forms(https://help.nintex.com/en-US/docgen/docservices/#docgen-sfdc/Services/manageDDP/t_Forms.htm).
