I want to create a Word template and then have it output as the email body, rather than an attachment. I have tried to set this up but failed. Is this possible? And will it copy over my branded images? Is there a video that demos?

Yes, this is possible. You'll need to do a few things in order to get this to work:
1. Update to the latest version of Nintex Drawloop
2. Add a email delivery option to your Document Package
3. Go to the Document Options and set the email type from Attachment to Email Body.
