Workflow for nintex form with repeating sections

How would your like the Workflow to interact with the repeating section?
There are many posts on this site in regards to parsing the XML generated from a repeating section to create new items or to display them in a human readable manner.

I need it to pull the data from the repeating section into an email notification.  Example listed below.

Employee: 

Time Missed from Class:
