Unique reference created ok, but updates as item moves through a workflow

Hi,

I have followed instructions and a unique reference number is created when a new item is created.  However, as the new item moves through my nintex workflow, the number does not remain static.  Is there an easy way to stop this happening (I am very new to Nintex and not a developer by any stretch of the imagination).
