Storing a date field in a variable in a site workflow returns an incorrect date

Hi

I am trying to initiate a notification when a date in a list field is within 7 days.  When I do so, the field date is appearing as 1/01/0001 and is including the time even though I have exluded the time. The workflow is as in the attached document.  I was unable to paste any screenshots.
