Is it possible to see my done actvivites? Or is there a possibility to view my done Workflows and my open workflows?

You will want to access the reporting data to get this information. A great example of this can be found here:
You will obviously need to derive code for your situtation. You can also use the Workflow Reporting SmartObjects and access data via those SmartObjects specific to that process.
