We are about to move all our forms onto a new server I am just wondering if when you package and deploy smartobjects across two environments does it UPDATE/APPEND or OVERWRITE the data if there is a duplicate Smartobject on the other side.

+10Just create the Service Instance in the other environment with exactly the same SQL or List column definition.
Let the package/deployment tool create the SMO's. if there is some issue, is because the SQL Tables or the columns list don't match otherwise should be pretty smooth.
