Non-SharePoint, Non-Web K2 workflow
I would like to create a K2 process using a standard Windows form UI client and not be dependent on SharePoint. Is this possible? Are there any samples?

It is possible. The K2 process functionality is not dependant on SharePoint or Web forms.
You can use any type of form technology that is able to access the K2 APIs. i.e. Windows Forms, WPF forms, etc.
