I'm migrating from On-Prem to On-Prem SharePoint and will migrate the Nintex workflows also. Source is using Standard Nintex for SharePoint destination is using Enterprise version of Nintex for SharePoint. Is this OK? Will it cause an issue?

As Simon mentioned above, migrating to a higher version of Nintex shouldn't cause any problems. Going from an Enterprise version back to Standard might cause some.
