We have a multiple hidden panel form based off a choice selection. How do I only email the panel information that is selected off of a choice option? Is there a way?

similarly, as you check value of choice control in form to show/hide single panels, you should check it's value in workflow and prepare mail body into workflow variable(s).
the configure mail action to send content of variable(s)
