Is there a way to remove the Workflow column from the My Workflow Tasks web part? Can the view be changed?

Hi Greg,
I don't think you can remove the column. The only adjustements you can do are located in the web part settings pane:
None of the settings affects the workflow column though.
You can raise an idea at Nintex user voice to support this feature or support this one which leads a bit in the same direction:
