Is it possible to create multiple fields for file upload which will be saved as attachments when form is submitted with nintex forms?

I agree, it is possible. That Attachement control allows for multiple attachments but you can also replicate the attachment control a few times on a form. When do have more than one attachment control on a form just remember to double-click one of the controls and mark it as the default attachment control.
