How do you create a URL similar to the one in the Task Notification mail  to go to the task in a reminder email of an Assign to-do task?

This is simply a matter of inserting a link in the reminder text. See below. Select the "Approval URL" from the Common references and add whatever text you want to display in the "Hyperlink Text to display" field.
