How do I trigger an email when a field is modified?

I have a notes field.  Anytime that notes field is modified, I would like an email to trigger.

 

In the on-prem version, this was simple.  The Notes field was set up on version history, so I just had a condition set to "is not empty." It worked just fine.

 

New Sharepoint Online doesn't have the version history feature.  And their workflows have lost some handy conditions as well.  Any idea how I can trigger an email solely when the Notes field is modified?

you can use the workflow trigger condtion to start when item modify.

I wish that was available in Nintex 365. But it is not. Any ways around it?

As per the following artcile, we have option to trigger the workflow based upon the condition. 

 

Maybe can you check the Nintex version is latest

That's where I am at. There is just no way to set a field to trigger when it is modified. YOu can only set it to trigger if it's a selection in a dropdown, or a greater than, equal than, contains, equals, etc. No option to select when it is simply modified.
