At the present time it is not possible to connect a List Lookup control to a multi lines of text control.
If you would like to see this feature in the product you can navigate to http://nintex.uservoice.com and make your request.
I do have a work around which is to put the lookup control inside a repeating section and configure it to allow only 1 row. The repeating section can be connected to a Multi lines of text column in Sharepoint.
