Email Notifications Not sending

I recently created a number of SharePoint lists with the intenstion of creating Nintex Forms and Workflows, with them.

Most of them are simple, and are taking inputed data, collecting it in the list, and sending an email to different parties.

In all cases, these new lists/workflows are not sending emails.  I have a number of other Nintex Workflows on the same SharePoint 2013 site, and those are working perfectly, so that leads me to believe that both the SMTP server and Nintex send email settings are setup correctly and working.

What at the list level would be preventing this?  I should note that I am a farm admin and site collection admin, so I have the highest level of permissions.

Hi,
Nintex uses a different class to send emails than what SharePoint uses. This is why Nintex has its own SMTP settings in Central Administration.
As this is the case we can use this to diagnose if the list is causing the issue. If you create a SharePoint Designer workflow on the list that functions similar to the Nintex Workflow is the email received.
I have seen issues where SharePoint Lists become corrupt and cause all sorts of issues but this test will tell you if its the list or not.
The next thing is to look at the exchange server and see if the email is being received but then dropped or something like that. I have also seen this issue before as well.
