Hey,

i am currently working on a nintex form to simplify the entry of data for a project. So if I press "new item" on my sharepoint list, the nintex surface appears; so far so good.

What I am looking for: If I click on "new item" i want to have a start page where the user can choose between creating a new entry or to edit an existing entry. Is that possible?

not that way.

you've to proceed opposite - select an item from list and hit 'Edit item' action from ribbon or local menu

@Link123, you need not to create any form if you don't want/like.

sharepoint provides you with OOTB forms. if you're satisfied with its functionality you  need not to bother with nintex (or any other) custom forms.
