I would like to know how to retrieve the audit trail on a datafield. i.e. when the data field was created and when it was last modified.
is it possible to do this?

I would investigate the usage of the OOTB reporting SmartObjects. If you are looking for a process data field, then I would recommend "Process Data Audit".
