I am trying to copy a rich text field from SharePoint into Email Body in the Send notification action. However, the rich text formatting is not preserved when the email is sent out via workflow.

How are you inserting the Rich Text field into the Notification? Are you using a variable or adding the field directly? Do you have rich text enabled on the notification? I just tested out inserting the field directly into a notification and it worked fine for me using Nintex WF 2013 On Premise.
