Archive/Copy Document and Change Name

I have a worklfow that runs a weekly report and exports to Word. When the workflow runs, I'd like to take the last week's Word doc and renamed it with the report date like so "Weekly Report - 12/1/2017"

All of the copy document info I've found leaves the doc name untouched. That will work one time, but I'd like the archive to be able to hold more than one document. Does anyone know how to do this?

I'm stuck on the step with the destination URL. The example in the link below is for a list workflow, and I have a site workflow. ItemProperty:FileLeafRef doesn't appear to be available for a site workflow. Anyone know how to do this with a site workflow?
