We are using Nintex with SharePoint Foundation.
What I need to do is have the form saved as an attachment to a list.
So the user would:
1. Fill out a form
2. Attach files
3. Submit the form
The list (or workflow) would
1. Populate a few fields with some of the form information
2. Attach any files to the new item
3. Attach the form itself as a PDF to the list item
I've search around and couldn't find an answer on how to do this.
Any tips or links would be appreciated.

So you have the form that has been filled out and saved as a list item. Now you want to convert this form as a pdf and attach it to the same item? or is it a different list?
You may not be able to do this as you are using SharePoint Foundation and Word automation service is not available.
We are looking to do that same as DA Arcil. We are using SharePoint Foundation 2013. The form results don't need to be in PDF, just a formated text file would workf for our needs. We just need both. 1 entry into the list. 1 file sent as an attachement.
