According to the Tips & Tricks newsletter (jan. 14th, 2016) it should be easy to insert images and videos in the editor. But I can only see an "insert image-button" - no "insert video-button". Why is that?

I'm going to assume you're talking about inserting a video into a Rich Text box in a Nintex Form.
You can do this by clicking on the View HTML button. It looks like this : </>.
Then insert some HTML to point to your video.

But I was wondering why it in the newsletter says "Want to spruce up your content? Simply add an image or video in the editor by clicking on either the image icon for images, or the video icon for movies". Are there differences between the editor in Nintex on premises and in SharePoint Online?

I'm looking at the on-prem version and I don't see an insert Video button. So I'm curious what they are talking. I could just be looking in the wrong place.
