Issue
Nintex external forms are not transfering data to the sharepoint list.
The Nintex External Forms online service in 2016 shows no option to Start/Stop or sometimes the service when started indicates that it does not match the min roles depending on the server role.

Resolution
To resolve the issue set the Auto provision for the Nintex External Forms Online service in Central administrator.
Central Admin >> System Settings >> Manage services in Farm >> Enable Auto provision for Nintex External Forms Online Service
