When we update the list settings for a form on SharePoint (i.e. more drop down list options on a form), the only way to update the form on the Mobile App is to delete the account profile and go through the entire log in process.
Is there a setting, function, etc. that would allow the form to automatically update?

You can update the data in the forms by hitting the 'Refresh' button in the top right corner of the page. This will sync any new form data as well as load in any additional forms. You should not have to sign out and recreate the profile to pull this information in. I ran a quick test using a List lookup on a form.
This is the initial list.
I added another item in SharePoint to the list referenced by the lookup control, then hit the refresh button from the top level forms page in the Nintex Mobile app and reopened the form. We now have the additional option available in the form.
