Is there a way of adding the details of fields that have changed to a notification.  I know that I can set a workflow to run when specific fields details change, but was wondering if it’s possible to show in the notification what the previous value was and what it’s been changed to.

 

FYI, I’m using on-premis version of SharePoint 2019.

I investigated this request, but unfortunately, like you, I didn’t come up with an out-of-the-box way to see the previous value.  Let's see if anyone else has a solution for this.
