Is there any way to see why a workflow is stuck when the last task has Task Status Completed and the Internal Status is not showing an error (it just still says Activity in Progress)?

Hi,
You could try contacting Nintex Support so that they can look at the workflow telemetry.
What actions are after the Task? This may give you an idea of what is happening.
Does it happen every time the workflow is run or is it just this one instance?
If its just the one instance just cancel the workflow. If it didn't complete everything it needed to do then run it again on the item.
