I am new to Nintex Workflows for Office 365, and I can't seem to find an update document action where you can change the value of a content control in a Word file. I used it pretty often in Workflows for sharepoint on premises, Is this available for sharepoint online?

You can generate new document with the "Document Generation" action, but you cannot update an already existing file except for templates.
The Update Document action that you see on-premise uses Word services and my Googling is showing that this service is not available in O365 and that is probably why Nintex has not implemented that action.
