I need to limit who can create Nintex O365 workflows to Farm Admins (or a new group I'd create, if possible). I can see how to do it at the Site level, but want to limit all sites workflow creation to Farm Admin. Any ideas? Thanks!

It is possible to restrict this using the admin settings in Nintex. Essentially you would setup workflow admins and workflow designers which can be accessed from the Site Contents > Nintex Workflow for Office 365 App > Settings > Admin.
