I am trying to update my form to the new responsive form nintex release but I don't the option to select it. I only see the old options.

Do not have the option to select the new responsive form

Navigate to site contents in Classic view for the sites where the New responsive forms is not coming up as an option.
Find the Nintex Forms app and see if there is a message about an update.
If there is an update, do it and see if that resolve the issue.
If not remove the app from the site and then re-add it.
No forms will be lost by doing this.

Where you see that the app is due for an update click that link.
Otherwise just remove and re-add the app.
