We have a need to have a user fill out a Nintex form, submit it, then have a workflow convert the form to a PDF and send it via email. Does this functionality exist? How would I do this?

+5No, but you can use the Document Generation action to accomplish the same thing. Create a Word document template that resembles your form, tag it with the Nintex Document Tagger, and then send an external email attaching that file. That should get you there.
