In certain type of documents where a content is populated from a rich text field in salesforce, is it possible to override any formatting from rich text fields and keep formatting constant as defined in word document template ?

You may be able to set a Word Style on the Tag that you want it to specifically follow.
Depending on what you are trying to remove and if the data was copied and paste in can cause different behaviors.
