Is it possible to generate a document based on data provided outside Salesforce?
For example can I call a DocGen api endpoint to trigger the document generation process manually, and pass REST variables to this endpoint to use while generating this document?

If looking to generate from inside Salesforce, you can set up Salesforce External data, then configure a DocGen Package to generate and deliver based on your needs.
If you are not within salesforce, you can use our Nintex Workflow product and use the DocGen Action to generate the documents.
If you reach out to your Account Management team, they should be able to find a resource to confirm depending on all your requirements and data.
